Frederick, MD – The Frederick County Business Development Advisory Council (BDAC) and the Frederick County Office of Economic Development (OED) held their Annual Business Reception last night at Martin’s in Walkersville.

Over 250 Frederick County business representatives, elected officials and community partners attended this year’s event. A brief awards ceremony was held honoring four unique and diverse businesses, representing our four target industries: Manufacturing, Advanced Technology, Life Sciences and Agriculture. OED also honored six entrepreneurial firms that have graduated from the Frederick Innovative Technology Center (FITCI) this year. Lastly, an award was given to a Frederick County citizen for Volunteer of the Year.

The 2008 Frederick County Manufacturing Firm of the Year was presented to Wright Manufacturing, and the 2008 Frederick County Life Sciences Firm of the Year went to SABiosciences. The 2008 Frederick County Technology Firm of the Year went to Orases Consulting Corporation, and Linganore Winecellars-Berrywine Plantations was selected as the 2008 Frederick County Agri-Business of the Year. The six FITCI graduates are: APE-BridgePath Scientific, HSRL Pathology, Imagilin Technology, Integrated BioTherapeutics, Cybrdi, Inc. and ChromoTrax. Mr. Patrick Haley of APE-BridgePath Scientific was awarded the 2008 Frederick County Volunteer of the Year.

Linganore Winecellars Releases 2008 Nouveau

Thanksgiving dishes created from autumn-harvested potatoes, apples, squash, corn and nuts have been perennial favorites since President Washington officially decreed the holiday in 1789. However, there is another edible harvested in September – the grape – that has the potential of enlivening the flavors of these and other menu items when transformed into wine. On November 1, Linganore Winecellars released its 2008 Nouveau, produced with a special variety of red grapes, grown this summer at the winery’s 60-acre Frederick County, MD vineyard.

While most wines require a 1-2 year aging process, nouveau is produced in just 6 weeks, resulting in a flavor that is both floral and fruity – atypical of most red wines that are bolder and dryer. “Many people are unaware that there are so many styles of wines,” says Anthony Aellen, Linganore’s vintner. “Nouveau is a very different stage in the wine life. Because it is aged a short period of time, it has a low tannin level, resulting in a milder, fruitier flavor.” Not surprisingly, many white wine drinkers have enjoyed their first glass of red when introduced to a nouveau.

Accordingly, nouveau encompasses dinner menus that traditionally are reserved for white wines. “There is a misconception that only white wine should be served with poultry and fish, and red wine served with heartier meats such as beef, pork or lamb,” says Aellen. “I believe such decisions should be based on the individual preparation of the food as opposed solely to the selection of the meat. Whites should be paired with milder recipes and reds with those that are bolder.”

Perhaps more so than any other wine, nouveau can bridge the widest range of dinner menus – ultimately, proving to be a great conciliator among red and white wine drinkers. And, yes, Aellen says nouveau pairs well with turkey. Linganore Winecellars makes a case for Aellen’s philosophy with a special wine tasting that is paired with several inspired Thanksgiving recipes. Throughout the month of November, the public can sample Linganore wines, including Aellen’s 2008 Nouveau with cranberry fig relish, sausage cornbread and chestnut dressing, sweet potato casserole, and cheesecake with plum sauce. “Each of the recipes offers an interesting twist on its traditional preparation with the infusion of savory meat, herb, and spice flavors.” Recipes of each of the dishes, are included in the tasting that is offered for $5.00 a person.

Aellen also refutes another common myth among wine consumers – ‘that all wines get better with age’. “Not so with nouveau,” which, Aellen says, should be consumed within 6 months of its release.

“Beyond that point, nouveau begins to loose its distinctive fruity character.” Linganore Winecellar’s 2008 Nouveau, produced using a hybrid grape bred by Cornell University, is a limited bottling. Being a limited bottling, this wine is available only at the winery.

Sweet potato casserole is one of four holiday dishes you can sample with paired wines – as well as take home the recipe to prepare at home – during the month of November at Linganore Winecellars in Mt. Airy, MD.

SWEET POTATO CASSEROLE

1 cup All-purpose flour
2/3 cup Packed Brown Sugar
1/4 cup Chopped Pecans, toasted
1/3 cup Butter, melted
1/2 tsp. Ground Cinnamon
21/2 lbs. Sweet Potatoes, peeled and cubed
1/2 cup Granulated Sugar
11/2 tsp Vanilla Extract
1 Large Egg White
1 5oz. can evaporated skim milk

1. Preheat oven to 350 degrees.
2. Combine flour, brown sugar, pecans, butter, and cinnamon in a small bowl. Stir to
form a streusel and set aside.
3. Place potatoes in a sauce pan with water to cover. Bring to a boil, cover, reduce
heat, and simmer until very tender. Drain well, place in a large bowl and mash.
4. Add 1 cup of streusel, granulated sugar, vanilla extract, egg white, and evaporated
skim milk to the mashed potatoes.
5. Spoon into a 2 qt casserole coated with cooking spray and top with remaining
streusel.
6. Bake at 350 for 45 minutes.

Award-winning wines will be paired with award-winning jazz as Linganore Winecellars - Berrywine Plantation hosts the 25th annual Vintage Jazz Festival, October 18-19 in Mt. Airy, MD. The event, which takes place at the picturesque 230 acre vineyard, draws thousands of regional attendees, and brings to a close the winery’s summer festival season.

Each day, attendees will have the opportunity to sample 19 of Linganore Winecellars - Berrywine Plantation’s 30 grape and fruit wines. The tasting will include seven coveted estate bottled wines, many of which have been honored with national and international awards. In celebration of the season, the sampling will also include spiced apple and spicy regatta wines, dessert wines produced with locally harvested fruit.

In addition to wine, the festival showcases two of the region’s most celebrated jazz acts. The David Bach Consort will entertain attendees with a playlist that includes both original and classic tunes performed in both contemporary and world jazz styles. Baltimore / Washington DC-based keyboardist/composer, David Bach heads up the six member ensemble that has been described by The Washington Post as “...impeccable... shimmering and refreshing.” The Consort was a recent winner of the “Jazz Discovery Showcase” on the Black Entertainment Television network and has performed at Jazzmatazz with B.B. King, at the Smithsonian Institution, “Jazzy Summer Nights” at Baltimore City Hall, the annual White House Correspondent Association Dinner and for USA Today. Bach, a three-time "Best Instrumental Band" honoree, awarded by Music Monthly Magazine, is preparing to release his fourth album.

For nearly two decades, Project Natale has excited audiences with timeless renditions of classic jazz standards as well as original compositions. Pittsburgh-born brothers, bassist, Joe, and drummer, Lou Natale, have shared the stage with the Duke Ellington Orchestra, Richard Elliott, Buster Williams, Nathan Page and Joe Williams. Highly-known among Washington / Baltimore audiences, Project Natale has performed at Blues Alley in DC and recently released a second recording, “Live From Silver Plaza.” The Natale brothers will perform at the festival with Carl Cornwell on saxophone and Bob Butta on keyboard.

In between music sets, attendees will want to explore the other festival offerings. Master vintner, Anthony Aellen will provide guided tours of the winery each half hour, showing the complete wine making process. Those touring will conclude their visit in the winery’s tasting room where estate bottled wines can be sampled. The festival will also pay homage to artisan heritage with the presence of more than a dozen craftsmen who will sell, and in some instances, demonstrate, trades dating back several centuries. Artisan crafts represented at the event include ceramics and glass, jewelry, leather goods, ironworks, candles and more. When not playing on the expansive 26-acre festival grounds, young and old alike can sit for a face painting session or make colorful sand art creations.

Regional restaurants and caterers ensure there’s a little something on the menu for everyone. Seafood fans will appreciate the crab cakes and shrimp prepared by the always popular JB Seafood. Landlubbers can enjoy savory pit beef, roast turkey and chicken by Harvey’s Catering. Old Time Caterers will serve up sausages, hotdogs, hamburgers, chicken nuggets and other picnic fare.

The Vintage Jazz Festival will take place Saturday, October 18 and Sunday, October 19, rain or shine. Gates open at 11am. Project Natale will perform from noon-3pm. The David Bach Consort from 3:30-6pm. Admission for adults 21 years and older is $15. Admission includes the wine sampling. Ages 18-20, $10. Those under 18 with an adult, free. The Aellen family of Berrywine Plantations and Linganore Winecellars was named the 2008 Farm Family of the Year at The Great Frederick Fair on Friday night. "It's a great honor," said Anthony Aellen, president and winemaker of Berrywine Plantations and Linganore Winecellars. "We've been doing grapes since 1972 and it's great to get this recognition after so many years. It's a nice feather in our cap."

Like other agriculture businesses, wine-making requires a lot of work and it's a business that doesn't promise quick returns, Aellen said. "From the time you put grapes in the ground to the finished product is like six, eight to 10 years," Aellen said. "We started putting the first grapes in the ground in 1972 and the winery started in 1976. With wines, everything has to age for a while."

The Mount Airy-based business makes more than 30 styles of estate, dinner, fruit, dandelion, honey and dessert wines. The wines have won more than 100 medals and awards in regional, national and international competitions and have been consistent winners in the annual Maryland Governor's Cup Competition.The winery has had many other feathers in its cap since 1971 when Jack and Lucille Aellen gave their newly acquired former dairy farm the name Berrywine Plantations.

In 1978, the winery was the first to hold music and craft festivals to help showcase their wines. In early 1979, the Aellens introduced the state's first semisweet wines and by fall their soft, light, low-alcohol fruit and honey wines made their debut.

With increasing interest in regional wines, Jack Aellen's petition to the federal government to award Linganore as Maryland's first viticulture area was granted in 1983. In the mid-1980's, son Anthony Aellen was promoted to wine maker while son Eric Aellen began vineyard management in 1992.

The Aellens commitment to consumers helped the business become the largest winery in Maryland, putting it into the top 5 percent of the largest wineries on the East Coast.

In 1992, to improve the casual and fun ambiance, the family enlarged the tasting/sales rooms and picnic/festival grounds -- improvements that helped accommodate the growing program of five weekend outdoor music and wine festivals and many smaller events each year.

In 2005, the family enlarged the original barn to accommodate a bigger tasting room on the lower level and a new indoor event area on the upper level. In 2006, they added a patio area for outdoor events.

To accommodate the growth, 15,000 square feet were added to house the temperature-controlled aging of bottled wine, the fermenting and aging of bulk wine in 20-foot tall stainless steel tanks, a barrel room to age wine in oak casks and a computer controlled press.

In 2003, the family imported a computerized bottling line to improve the efficiency of production. Today there are 50 acres of vinifera and hybrid varieties of grapes in the vineyard.

In 1993, Lucia Simmons joined the winery as Director of Marketing. She provides liaison work with trade groups, state and local governments and works with the distributor to ensure wine delivery to restaurants and retail liquor stores in Maryland . She is also in charge of the festivals and events.

Mount Airy, MD – The arrival of spring brings buds swelling from newly awakened tree limbs and flowers peeking through the earth into the warm sunshine of May. The signs of spring are everywhere, on Linganore’s 230 acre estate with 60 acres of vineyards.

Linganore Winecellars is proud to introduce our traditional wine of spring, May Wine. This young, white wine is flavored with sweet woodruff, an herbaceous perennial plant that tastes of cinnamon and is grown in the forests of Europe. May Wine, or “Maiwein” as it is called in German, has been a standard of the Black Forest region of Germany for centuries.

“The ’07 vintage is a spectacular one,” says Vintner and President Anthony Aellen. “Our May Wine is showing refreshing citrus notes with a clean, crisp finish. Serve it to your guests along with fresh fruit while enjoying the evening on your deck or patio. It’s a light and refreshing treat.”

A variety of wines will be paired with deserts from Just Desserts by Linda from Syksville, Maryland. Linda Gourley, pastry chef and owner, recommends that the delicate aromas and slightly spicy background of this slightly sweet wine make it perfect for pairing with strawberries or chocolate desserts.

Mount Airy, MD – Linganore Winecellars will be hosting a murder mystery dinner theater June 7 – 8, 2008 in conjunction with Fredericktowne Players, and Romano’s Macaroni Grill. The night promises to be full of intrigue and fun for all guests!
The exciting evening begins with a sumptuous meal prepared by the skilled chefs at Macaroni Grill. The expertly selected a menu includes their most popular entrees, including Peasant Bread with rosemary and Genesio Olive Oil, Insalata Blue, Chicken Portobello, Pasta Milano, Spinach Orzo, Penne Ala Aglio Olio, and green beans in a garlic wine sauce with almonds. Dessert is a heavenly lemon mousse topped with Italian whipped cream and layered onto citrus cake soaked in a sweet cream. Two glasses of the Linganore Winecellars wine of your choice, served in a keepsake glass, is also included with each meal.
Following dinner Fredericktowne Players, a volunteer community theater company that has been providing live theater to the Frederick Community for almost 40 years, will present Ace of Diamonds by American playwright, T. James Belich. The gripping plot centers around the recent theft of a mysterious ruby called the Bloodstone. Six guests are brought together by Iago, the mastermind behind the theft, whom none of them have ever met. Although they all claim to be strangers, past relationships and hatreds are soon revealed, as the guests are murdered one by one. Ace of Diamonds is directed by Tim Seltzer, and stars Tony DeRosa, Kiersten Harris, Karen Plummer, Michael Gilmore, Sheila Cunningham, and Jim Webner.
“We’re excited to host Fredericktowne Players presentation of Ace of Diamonds,” says Vania Jacobs, Linganore Winecellars’ Event Coordinator. “It promises to be a memorable evening of fine wine, great food, and exceptional entertainment.”
Director Tim Seltzer says, “This is a very exciting opportunity for me, personally, and for FtP. It's a brand new adventure for us, and hopefully the start of a long and successful relationship. There are so many opportunities for future shows with different themes and/or audience participation. Anything is possible, and there are so many great scripts out there to explore. I look forward to giving the audience a top quality show with interesting characters, laughs and surprises through the very end.”
Before moving from his native New York to Maryland four years ago, Seltzer was an active presence for over 15 years in the New York and Connecticut theater scene, directing shows such as Mary Shelly's Frankenstein, The Complete Works of Shakespeare (Abridged), and Eleemosynary. He has also been seen onstage in Equus, It's a Wonderful Life, and Twelfth Night. Seltzer’s most recent endeavors in his adopted home state include directing the Silver Spring Stage One Act Festival and Fredericktowne Player’s 2007 presentation of Amadeus.

Kiss Old Man Winter Goodbye with Linganore’s ‘Reserve Wine and Cheese Pairing’

Mt. Airy, Maryland - Celebrate the rites of spring, sunshine, flowers and wine with Linganore Winecellars ‘Reserve Wine and Cheese Pairing.’ Throughout the month of April, guests will enjoy a special selection of past vintages paired with a fine selection of distinctive cheeses from Euro-USA in Sterling, Virginia, an importer and distributor of specialty and imported fine foods and seafood.

Visitors can expect to enjoy five different cheeses paired with various reserve wines, including several past vintages specially selected for this pairing. Linganore winemaker, Anthony Aellen is looking forward to this spring tasting. “The most frequent question I get is how long should I keep a bottle of wine and what happens when you set them down to age? Well, here is your
chance to taste the answer,” says Aellen. “This year we are presenting four gorgeous red wines from our library, two older vintages of two different grapes. A vintage 2000 and 2001 Cabernet Sauvignon and a 2001 and 2002 estate bottled Chambourcin. We offer this unique opportunity to compare wines of the current vintage to older wines of the same variety, so you can see how the
taste and structure of the wine changes with time.”

The cheeses at this tasting include Euro-USA’s Cabot Cheddar Private Stock—a sharp and tangy Vermont cheddar, creamy at first taste with a nice pungent cheddar flavor at the end paired with the Linganore’s Chambourcins—estate bottled full-bodied reds, with overtones of raspberry and oak. The Roomkaas Gouda—a luscious cow’s milk Dutch Gouda traditionally aged six months and often enjoyed in Holland with wine and crackers or on sandwiches will be paired with several wines, including the reserve Cabernet Sauvignons—lower tannin wines with soft, light fruit backgrounds and just a hint of oak.

Additional cheeses will consist of Boursin Herb—a creamy soft cheese with fragrant garlic and herb, Campo de Montalban—a savory blend of cow, goat and sheep’s milk cheese from Spain and Pecorino Toscano—a sheep’s milk cheese made from milk taken from sheep that roam the lush green pastures of the Tuscan countryside. Aged at least one year, this cheese is a bit more firm and salty with a satisfying finish.

Celebrate Mother’s Day Brunch at Linganore Winecellars

Mount Airy, MD – March 28, 2008 – Linganore Winecellars will be hosting Mother’s Day brunch Saturday, May 10th and Sunday, May 11th at their lovely 230-acre farm and 60-acre vineyard known as Berrywine Plantations.

Treat Mom to an elegant buffet-style brunch served by Leiters’ Fine Catering. The gourmet menu includes hand-carved turkey breast, cheddar-bacon or Swiss-broccoli quiche, bow-tie pasta with spinach and mushrooms in a creamy alfredo sauce, breakfast potatoes, and fresh fruit salad. A variety of sweets, including Leiters’ homemade sticky buns, pumpkin nut rolls, and mini chocolate cups filled with strawberry mousse will complete the Mother’s Day feast. Guests 21 years of age and older will enjoy one glass of the Linganore wine of their choice and one mimosa served in a keepsake wineglass with their meal. Orange juice, cranberry-apple juice, and regular or decaffeinated coffee will also be available.
As Mom dines, she will relax to soft music in Linganore’s magnificent Abisso Hall located in their newly restored 19th century peg barn. Floral Design by Ory will present Mom with a fresh floral stem, and Linganore’s professional staff will surprise each table with an additional special gift. Door prizes will also be given away.
Memories of Mom’s special day can be captured with a professional family portrait by Lidia Miller Photography. Sitting fees are waived during the Mother’s Day Brunch, so you just pay for the portraits.

For many people, the most treasured part of the holiday season is the presence of an old friend. This dear friend’s visit is never long enough, but so enjoyable that the memories linger.

At Linganore Winecellars that special friend is called Sweet Chessie, and has finally returned after a two year absence.

Sweet Chessie is a dessert wine made from late-harvest Vidal grapes that are left on the vine three to four weeks longer. The grapes are picked, immediately pressed, and cold-fermented in stainless steel for four months.

“ It’s been a long time since we’ve had weather conditions allowing for a late harvest,” explains Linganore Winemaker Anthony Aellen. “This year’s dryness allowed our Vidal grapes to remain on the vine longer.”

During the extra ripening time, the grapes become botrytized—slightly raisined on the outside, while the flesh inside remains juicy. The juice takes on a rich golden color; while acidity is diminished. Most importantly, botrytization adds to complexity and flavor development by concentrating the sugars in the fruit. The result is a fine wine that should be enjoyed with foods, such as cheesecake, chocolate, and fruit.

Caramel, honey, dried fruit, and nutty are commonly used to describe dessert wines, but Anthony is reluctant to label Sweet Chessie. He explains, “It’s all about perception. What I smell and taste are different than what you smell and taste.”

He swirls a splash of Sweet Chessie in his glass, takes a deep sniff of the aroma, smiles, and sighs. He continues, “Flavor complementation means that the flavors of both food and wine are enhanced.”

Tasting Room Manager, Joanne Lachance agrees, “Just as you’d match a bold entrée with a bold wine, you should pair a sweet dessert with a sweet wine. Sweet Chessie is the ideal choice to complement dessert after your special holiday dinner.”

The popularity of Sweet Chessie mirrors a national upsurge in demand for dessert wines. Priced at $19.05, Sweet Chessie makes for an affordable holiday gift – but a gift that won’t be available for long. Customer demand is exceeding expectations, and the winery’s 4,000-bottle inventory is expected to sell out fast.
